I saw in one of my very old good food magazines this method of making ‘ravioli’ using vegetables. You basically use a mandolin to get a very thin slice then you put in filling and then wet the edges, stick together and hey presto you can make a stuffed vegetable ravioli.
Well not hey presto at all as I could not make it work. The vegetables just would not stick together so I abandoned it and lightly fried them in butter and garlic and I used the filling to stuff my chicken breast and I served that with home made gravy. It was delicious even if it was not the dish I envisaged. I will need to try this again, I hate failing.
