I really love flavourful foods, it doesn't really matter to me what it is or where it comes from just as long as it is full of gorgeous tastes. Tonight we made a gorgeous, light, really tasty, very quick meal, warm tomato and chorizo salad on sour dough with possibly a touch too much feta (as if that’s possible!).
Amounts are per person so easily scaled up. Take 50g of sliced chorizo and fry until golden. Add 50g of chopped tomatoes and cook until soft. Season with salt, pepper and a touch of sugar. Meanwhile make a quick dressing with ¼ tsp Dijon mustard, 1 tsp of sherry vinegar and 2 tsp of olive oil. Whisk and dress some simple salad leaves. Take a slice of sour dough and top with the leaves and the warm salad. Add 30-50g of feta and top. 15 mins start to finish. A perfect weekday meal after a busy day. If you are vegetarian or vegan just use vegan chorizo and a feta alternative.
It was just delicious, every element working really well with each other. The kind of meal you finish and think I really could eat that all over again.
