The weather has been so odd today, it is really humid and warm but so overcast. Despite this we wanted to braai. We saw these gorgeous pork cutlets yesterday, they really thick with a good fat layer and I thought they would work well with charred cabbage ad this is exactly what we did, all coated in a beautiful grain mustard and cider sauce, it was just so good and really simple. Charring cabbage is absolutely the best way to cook it, either outside or in, just give it a 2 min steam in the micro then transfer to char the outside, it makes the cabbage sweet in a funny way. Just delicious.
