Today we made a fabulous recipe, it was breaded mushrooms with noodles.  The breaded mushrooms are cooked in the oven so, I admit it, I was very very sceptical however, I needn’t have been, the mushrooms were crispy and golden and so surprisingly good. It actually took us all by surprise and will definitely be cooked again.

The dish is vegan and instead of dipping in cornflour, egg and then breadcrumbs, you use aquafabia - perfect!  We all thought the mushrooms would have gone perfectly with katsu and rice so I will be testing this theory soon. Tough life ;-)
