I bought a butternut squash with the thought of making a Thai red curry with it. However after finding the risotto rice in the cupboard my thoughts turned to butternut squash risotto and wouldn’t stop thinking about it. After mentioning this to Victoria said she now really just wanted risotto - enough that she would be happy to make it and that was that, our evening meal was decided on.
I love cooking but today I am tired and finished the day job late and so not cooking was very welcome. I love how the butternut squash goes sticky and has a deep flavour, it goes so beautifully with parmesan and is a bowl of comforting creamy deliciousness. Yum.
