Shopping Tuesday I saw some gorgeous sweet potatoes, they were really large which is great because I don’t eat the skins so tend to need larger potatoes.  You can eat the skins but they tend to come out not very crispy so I prefer not to.  The flesh was soft and lovely and we smothered them in butter and flaked salt and boy were they delicious.

The best way to cook sweet potatoes is on a bed of rock salt (which you can pick up very inexpensively), sweet potatoes tend to ‘leak’ and stick on to baking trays and so this is perfect.  Salt is a very good conductor of heat and so works great - you can do this to regular baked potatoes too.

A simple very delicious meal which took all of 5 minutes in the kitchen, perfect.
