I have been reading a beautiful cookbook (inside and out as the cover is a gorgeous bright yellow), Mandalay by Mimi Aye. It is based on Burmese cuisine which I had no idea about before I started reading this book. It is like a mix of Indian and Thai without the heat. There are some gorgeous recipes and as always, it is difficult to know where to start. I am not a it tofu fan and really never have been actually (I have an issue with the jelly like texture mostly) but the tofu fritters caught my eye from first flick and I find myself continually going back to them so I am tempted to start there.
