The sun is out, there is a chill in the air but the sun is shining. I don’t suppose there are many sun filled days left this year and so we made the most of it and lit the Kamado Joe. We made cumin squid with pea mint and tomato salad which is absolutely beautiful. It is light, full of flavour, summery and healthy but, best of all, 20 mins start to finish. What is better for midweek. You need large squid which you slash on one side and cover with cumin. Make a salad of tomatoes, peas and mint and cover with a vinigarette. Leave the salad to infuse while you cook your squid over HOT coals.
