Basil pesto pasta with bacon is fast becoming my favourite pasta. You need thick bacon or pancetta (if I pre-plan this I use pancetta chunks and if it is a last minute thing for whatever reason then I use whatever I have) to make it REALLY great rather than just great.
It is simple, cook the bacon until starting to go golden and crispy and then add an onion. Cook for another few minutes before adding mushrooms if you fancy it and garlic after a few more minutes. Add half a jar of pesto, a few large spoonfuls of either crème fraiche or cream cheese and a stock pot and lots of black pepper. Toss through cooked penne, top with parmesan and hey presto you are done. A simple gorgeous meal in under 20 minutes.
