Do you like spanakopita? Yes me too. In Greekish there is a section on spanakopita with lots of different dishes and ideas using those ingredients. Today we made spanakopita risotto, we used kale rather than spinach, the feta over the top and lots of fresh lemon which was so fresh and lovely. It needed the parmesan for the creaminess and the saltiness but it was very fresh and delicious. I have really enjoyed the recipes from this book. Next month is Mediterra by Ben Tish.
