For quite some time now I have been developing a recipe for bbq chicken and sweetcorn pasta. It doesn’t always take this long it is just that the first few were made with ready cooked bbq chicken which I have not been able to get so easily since September. It sort of got put a bit on the back burner as I hoped the chicken issue would resolve itself. It did not resolve itself and so, it was almost like needing to start all over again to get a similar taste and feel. So this final version I think is fantastic and maybe even better than the first version. I upped the smoked paprika and bbq sauce and finished with a smoked mozzarella which really did work a dream.
