In the book of the month, Three by Selin Kiazim there is a beautiful warm savoy cabbage with peas and bacon dish I wanted to cook. It was very much a side dish or lunch and I wanted it to be the main dish so I thought I would add pork belly. I came up with a recipe using beer and caraway seeds and cooked it low and super slow for 4 hours and then cranked up the heat to max to get really good crackling. I could not have cooked it any better, the pork was so succulent but still holding together and the crackling was perfect, cooked so well that you don't feel like you are going to break a tooth. The cabbage salad needs work but has the makings of a very good dish.
