The best chicken mayo sandwich is made like this: take 2 slices of any bread per person (favourites of mine are oaty and white bloomer) and butter them. Take enough chicken for however many sandwiches you are making (this really is going to depend on the bread you are using and how thick you like it but I would say 1 breast between 2 would be plenty) and cut into slices or small chunks and put into a bowl. Add 2 tbsp of mayo and with your fork slightly mash the chicken as you stir. You don’t want all of the chicken to be mashed as you want some texture. Add some salty seasoning such as aromat etc and a little pepper and mix. Share the chicken amongst your bread and marvel at how fabulous something so super simple is.
