We still have lots of leftovers so today made bubble and squeak topped with a fried egg.  This is possibly one of the easiest but tastiest meals you can make with leftovers.  You have to be really really patient with bubble and squeak and understand it is going to take a while to get a crust and stir through and repeat but it is so worth the wait.  The way the egg yolk flows over makes it even better.
