I have been flicking through Nigel Slaters Christmas Chronicles book and I happened to come across the malt loaf recipe. Back in the summer I remember seeing malt loafs on the GBB and at the time I wanted to make one but so did everybody else in the UK and so malt was almost impossible to come by at that time. I have since managed to find malt and I love Soreen and we still have a lot of cheese and so I went into the kitchen and an hour later the most amazing smells were filling the house.
Freshly cooked malt loaf blows anything you can buy out of the water. It was so delicious I was surprised. The outside had a beautiful crunch but the inside was so soft and gorgeous. The recipe itself was simple enough if you can get hold of malt so do try it if you can.
