So the sun was back today thankfully, winter is so long it is always great to have a warm sunny day. With the sun back out it was into the garden cooking with the Kamado Joe, a gorgeous nectarine and burrata salad, it is so simple. Recipe for 2. You just need a couple of slices of sourdough, 3 nectarines, a ball of burrata, a chilli, a small handful of mint, lemon juice, olive oil, a touch of sugar and salt and pepper. Over the fire caramelise some nectarines that you have cut into 6 or 8. Meanwhile make the dressing by whisking the lemon juice and olive oil together, add a touch of sugar to take off the acidic edge and some salt and pepper, mix again and add a finely chopped chilli and some chopped mint. When the peaches are charred and soft remove them to a large serving bowl and put on the bread, watch the bread carefully as it takes no time at all.
Cut the bread into croutons and put in with the nectarines, pour the dressing over and give a good mix through. Put the burrata on the top and with your knife cut a cross into the top so that when dishing it is easy to take the cheese and the soft cheese will coat the salad.
I like to serve on rocket just as is but if you wat the salad to stretch to 4 people just add some cooked chicken.
