After our return on Friday I mentioned to Victoria that I had planned on making Thai style Moules and frites for our Friday evening meal as it was so quick and easy but, on one of my shops I forgot the mussels and on the other they were not delivered. She was very upset because once I uttered the words Thai mussels they were there in her head.
Anyway she came over this evening with Noah and I made red Thai curry moules and frites which we all I absolutely LOVE. They were divine, plump juicy delicious mussels feel less rich somehow with a Thai sauce. Best of all? The longest thing about cooking this dish is the chips, otherwise it was ready for the table in 20 minutes.
