It was Matt’s turn it pick dinner today and he decided on burgers - which was lucky really as all week I have been thinking how good burgers would be.  Today we went simple and just had cheese burgers with crispy bacon and gherkins - delicious.

The beef has to be REALLY cold and I usually put into the freezer for 15/20 mins.  I season the beef with salt, pepper and oregano and then mince the beef, I then add onions and mince a second time before shaping into patties and leaving in the fridge for a good hour to form properly as I don’t use binders.

Served with a brioche bun and some iceberg and ketchup, what more do you need?
