A friend of ours daughter has covid and so I thought I would bake some chocolate goodies to hopefully make her smile. Tomorrow is national shortbread day and so I wanted to test a chocolate shortbread recipe anyway so it seemed like a great excuse. It worked really well, I thought maybe they were a bit too bitter/chocolatey but my quality control testers (thanks kids) both seemed to love them. I think a little sprinkling of caster sugar before baking and they would be great.
I also made some brownies and used my thermomix with my trusty recipe just to see how it fared and what happened. It was super super easy and the only mishap was when I folded through the chocolate chunks they melted! So next time I need to either chop them larger or scatter them in the tin as I am pouring the batter.
I also made a batch of peri peri sauce as it is great to have in the fridge, it really peps up soup and makes great pregos and chicken and it is so so so much better than the one you can buy in the supermarket. I wanted to try a clementine and spice one with the orange peppadews but they are proving to be really difficult to source at the moment.
