We had beef left over from Victorias birthday dinner and so today I made a slow cooked massaman. Massaman is one of my favourite meals, it is so flavourful and, done well is hard to beat, it is like the Thai equivalent of a beef stew.
I started it on the stove cooking out the paste, coating the beef and cooking out the onion and then I cooked it for 2 hours in the oven making my house smell beautiful all afternoon. The beef was so soft it could be cut by a spoon and the potatoes had soaked up the gorgeous curry gravy.
I also figured out that the best way to roast peanuts is in the oven. Seems so obvious now after toasting them in a pan up until this point. You just need to put them into a 180c oven for 5 minutes and they will be perfectly toasted and golden.
