I really have been longing for some green vegetables which I absolutely love. It is snowing today and super cold so I thought having something spicy would be a great plan. I was flicking through recipes and thought I would make saag aloo and gunpowder paneer as I had some paneer in the fridge. I love saag aloo, it is like the Indian version of bubble and squeak (which honestly is one of my favourite dishes). I think you are supposed to blitz the green veg to make a sauce but I like the veg wilted and whole. It was my first time eating paneer and it honestly reminded me of halloumi. I put the gunpowder spices all over the outside and gently fried. I could just have eaten a big bowl of saag aloo to be honest but the paneer was there and delicious and so obviously I ate it.
