I was feeling lazy today, it has been another long busy day. I didn’t finish the day job until late so wanted something easy, comforting and full of butter. There was one portion of leftover chilli in the freezer and some beautiful Vivaldi baking potatoes in the cupboard - perfect.
So how do you make the perfect jacket potatoes? Wash them and with a sharp knife poke the potatoes for the steam to escape. Pour some olive oil into your hands and smother the potatoes in oil and then season the potatoes well all over with salt. Place on a wire rack and put into a hot oven (190c) for 1.5 hours or until soft.
When you cut open the potato and smother and mix through your butter, don’t forget to season the inside of your potato also, properly seasoned vegetables are so good, potatoes being the ultimate vegetable.
I also served these with a sprinkling of double Gloucester - my favourite, favourite cheese. It was just what the doctor ordered.
