I cannot tell you the last time I had an omelette but today looking through Raymond Blanc's book I saw one and then could not get it out of my head.  The fantastic thing about omelettes is the speed, I love ham and cheese but also messed around with spring onions which I prefer to be lightly cooked.  Even with the spring onions the whole thing took less than 10 minutes.  Perfect for when you are busy and it makes a change from a sandwich.
