I have been reading through my Dominique Ansel Secret Recipes cookbook and wishing that when I went to his bakery I had bought different things to try.
During Covid my brother James made me aware of the cronut, a sort of croissant/doughnut highbred. It was so light, so flaky, so crispy and so delicious that other doughnuts now just pale into insignificance. I wanted to try it so badly that we drove to London Victoria and then drove back just a week or so later. Sadly by the time I had discovered the cronut, Dominique had decided to sell up his London shop.
I wish before then I had discovered them and read the book as now there are so many things I wish I had tried/I want to try.
The madeleines sound incredible as do the canneles and sadly now they and the cronut are only available in America. Good excuse for a long weekend in New York I guess. It is a tough job but somebody has to do it.
