We used our master stock today to poach a chicken, it was so so delicious, really full of flavour and it felt healthy and made me feel virtuous.
We took our master stock and put new aromatics in, brought it to the boil and then we added our chicken and simmered our chicken until almost cooked and then we took out 2 cups of stock and put in some pak choi and turned off the heat. To the 2 cups of master stock we added sugar, chilli and lime juice and hey presto one absolutely gorgeous meal.
