Last weekend when we made the beef and oxtail Vietnamese stew, we bought much more oxtail than was needed so left it for this week. We made a recipe from Ben Tish’s book Moorish, an oxtail and chorizo stew which was absolutely delicious. It was very deep and rich and honestly, just divine. I really love the garlicky paprika taste in chorizo and it cooked down so it was soft and lovely. We served with polenta but really it should have been potatoes and onions which would have been much more Spanish.
