Quite some time ago I saw this Martin Boetz Thai salad with egg nets and wanted to try it and today finally I have. First things first, the salad is delicious, the cucumber pickle divine and it really added to the salad. This was light, fragrant, tasted, spicy, hot, sweet and sour and just wonderful.

The egg nets however took some time to get the hang of and still I would say were too thick on the first direction but as I went through pancake after pancake trying to get the hang of it, they got better and better.  Next time I know they will be lace like and wispy both ways, well maybe after the first 3 ;-)
