The weekends are all about cooking and trying new dishes and most recently, testing recipes.  Today we were testing an Italian chicken dish with our wonderful friend Clare.  Clare has tested and cooked with me a lot over the last 6 months and has been really invaluable. I feel lucky to have such a great friend.

The chicken was really tender and the sauce was beautiful.  We browned off the chicken and removed from the pan and then added shallots, garlic, chilli, and fried till golden, then we added wine and cooked out and added tomatoes, stock and herbs, put the chicken back and cooked for half an hour while we cooked the polenta.

I love polenta and like to cook it with chicken stock (I like the stock pots if I don’t have home made stock), you slowly rain the polenta in stirring with a whisk the whole time.  At the end I like finishing with butter.
