Because we are going away on Wednesday, Victoria organised for her, Matt and Noah to take us out for breakfast today for Mothers Day at Cote. I do really like Cote, I really love the food, it is usually well cooked, simple and yummy and I love that there is space around the tables so they are not crammed together. I (very very unsurprisingly!) had eggs benedict which was just delicious and a mimosa. A perfect and lovely start to the day.
For our evening meal I made a fajita chilli bake with the leftover chilli which was a perfect way to use up the leftovers and not feel like we were just eating leftovers. That is my favourite leftovers meal, not just heated and eaten, but made into a completely new dish.
