The kitchen was out of action today as the wooden worktops were treated so the Kamado Joe was again wheeled out, this time for baked feta and crusty bread. I love this, with fresh tomatoes, onions and chilli simply baked in foil it is divine. Simple but filling, relaxed and lovely. You literally just take a sheet of foil, put sliced onions and chilli, some halved cherry tomatoes, olive oil and black pepper and then just cook for about 20 mins. It is a lovely meal. You can also fold through pasta as was last year’s trend although honestly it is lovely alone.
