The dish of the month on the book club for the Great British Chefs Around the Table book I would say is the hake cabbage and cauliflower dish. I love fish and cauliflower is easily my favourite vegetable in the world and I love cabbage also so for me this is a dish that was always going to be made.
It is unfortunate that this plate of food is so brown and muted because the flavours were just unbelievable and as it dish it worked perfectly. I loved the caramelised cauliflower puree, loved the charred hispi cabbage which although soft still had enough bite to stop it being mushy and the fish gorgeous and the capers just made it pop. A truly stunning dish and one I would happily cook again and again and again.
