There are a couple of recipes I have wanted to cook for quite some time, one is a cod boudin with pan fried cod and a beurre blanc sauce. I love beurre blanc and I love cod and so have been very intrigued by this. Since I have been trying to eat healthier for almost the last year I just have not got around to it. However today seemed like a good day to suck up the calories and give it a go.
Making the boudin was really interesting and whizzing it in my blender it was so interesting to see the texture change. Rolling it up and cooking it worked out well and it puffed a little as it set and was very delicate. I am so glad I eventually got around to making it. The beurre blanc set everything off and served with mashed potatoes it really was perfect and delicious.
