I love cooking and really do love baking. I love how a simple sponge cake can be transformed with decorations.
I have been working hard on my cake decorating skills and while working away on the 21st birthday cake today, I realise that I used to put on way too much buttercream. You need to put on your buttercream fairly thick and then use your palette knife to remove the excess so it leaves just a skim of buttercream, leaving it looking like a ‘naked’ cake. Your fondant icing will then go on like a dream.
