Today is leftovers day, a day where I use up remnants of dishes or ingredients so they do not go to waste.
Last week I bought a beautiful side of salmon and ended up only needing half so I had the other half leftover along with some filo pastry and a half a jar of pesto and some cream cheese from the weekend so came up with a dish to use all. Salmon pesto pie - salmon in a creamy pesto sauce with scrunched crispy filo on the top.
My confidence started to wane after I put it in the oven but it didn’t need to. It worked really very well and was delicious with some leftover potato bake. Took 10 mins of prep time tops - just what you need for the middle of the week.
