I have a new cook book, Theo Randall’s The Italian Deli and flicking through yesterday. I thought it would be nice to have spaghetti vongole on Good Friday because it I love it. We all love clams and what a lovely dish for Good Friday. Today the fish man is in Sevenoaks and his fish is top quality and so Clare picked me up some clams. My plans were clean the clams, cook the clams and then store them for Friday.
What actually happened however is my mind however kept saying hmmmm clams. Clams. Clams are in the fridge. Clams are yum. Spaghetti vongole is easy, it has been a busy day, dinner could be on the table in 20 minutes. And so the decision was made, they would be eaten tonight as a spaghetti vongole. Boy were they delicious. I need to think again now for Friday ha ha
