Today football fever continues and so I thought I would get to the butchers nice and early. I drove there before 8am to buy chicken wings. As I queued I could see some gorgeous things and so not help myself, I bought fresh bread, crab mayo (which seriously is gorgeous) and a cauliflower because it looked so cloud like and I thought this would make a great alternative to wings for vegetarians.
I love fried chicken wings but they do take effort and with some testing I think we can achieve a very similar crunch using the oven. The key is to put them on to an oven tray in a single layer, not overlapping at all, covering the wings in a little baking powder and then starting low (120c) for half an hour and then increasing to searingly hot (220c) for 30-40 mins. You will find they come out crispy and gorgeous and really take very little effort.
