I love spending time cooking on weekends and decided to make beef birria tacos, a gorgeous slow cooked short beef in a tomato, adobe and chipotle chilli sauce. It is deep and rich and so lovely. The original recipe has refried beans in it and we are not huge fans of refried beans (I would eat them but don’t love them) so I just altered the original to be more in tune with what we like. This is a repeater and one of the things I love the most is that it is very minimal effort yet really does deliver on flavour.
