Today Victoria and I were talking about chicken casseroles and she reminded me that some time ago Sean was testing our beef and chorizo stew and decided to make it with chicken as they don’t eat much red meat.  So after coffee today I went shopping for the ingredients and came back and got into testing the new recipe.  I have to say I am really pleased with it, the original is deep and unctuous but this was lighter yet so full of flavour and so moreish.  Divine.  The recipe has gone off to my testers and should be up in a few weeks.
