I have a thing about fried chicken.  I absolutely love it and love trying new recipes.  Today we returned to one of my favourite cookbooks, Fire Islands by Eleanor Ford.  I absolutely love this book and love the food within it, all of the recipes I have tried have worked out really well and they are just so delicious.  So we made Indonesian fried chicken.  This was very different in that you poach the chicken in coconut water and aromatics and then dry it and fry it.  The flavour that the chicken took up from the broth was unbelievable and it was just so delicious.  We served it with sambal and sweet potato fries.  The sambal was also absolutely incredible.  We have saved the broth as suggested to use in a soup.
