Today we made such a gorgeous dish, ancho chilli beef short ribs with charred corn with Manchego corn polenta. I love smoky tomato chilli deep rich slow cooked dishes and this was incredible. The pops of charred sweetcorn really added to the dish, as did the soft creamy polenta. The dish was deep and unctuous, the sauce was thick and rich and went so well with the beef ribs. This was one of those dishes that just worked out so well everybody wanted more.
