Today is National sticky toffee pudding day, one of my absolute favourite desserts ever.  It is sticky and sweet and unctuous and delicious, I love it.  What more excuse is needed to make a sticky toffee pudding.

I was also recipe testing Eves pudding, a beautiful Welsh apple pudding which with some tweaking was absolutely comforting and delicious.

Then Rhona promised Matt she would make him some ice cream, his favourite ice cream is Phish food so we wrote a recipe which we thought would work and honestly, it was the best ice cream I have tasted in such a long time.  It was so close to the original that blindfolded I don't think you would be able to tell the difference.
