Tonight we turned the leftover beef and chorizo stew into a pie. A glorious golden beautiful puff pastry pie which we had with mash. Honestly is there anything better than mash when you feel in need of a hug. Victoria was over for tonight and I forgot just how much she and Matt can bicker. Despite that I miss her so much. Luckily the pie stopped the arguing and it went so nicely with a glass of ripasso. I love dishes that are full of flavour where the oven has done almost all of the hard work. The best bit (aside from the pastry obviously) is how the chorizo softens so much and literally just melts in your mouth.
