My beautiful daughter is 21 tomorrow but as she is going out with her boyfriend on her birthday so we celebrated as a family today.
As a family we have decided with the COVID rates rising we don’t want to go to out and so I said Victoria she could have any meal she wanted, she picked roast beef with Yorkshire puddings. We got a beautiful rib of beef and had roast potatoes and glazed carrots with home made gravy followed by a chocolate birthday cake with warm mint chocolate sauce.
We laughed and ate way too much and drank Prosecco and had a lovely afternoon. We will celebrate with family and friends when restrictions are lifted
My top tips for a rib of beef:
Season the beef just before you start to cook it.
Make sure you sear the outside either in a pan on the hob or in a searing hot oven, turn down to 140c and cook for 20 mins per 450g for medium. The good thing about a rib is the outside is nearer to well with the very inside being rare - it covers all bases.
Make sure you rest the rib fully as it makes it much more tender.
