I needed to think about the week ahead as the shopping is due tomorrow and I also need to get my order over to the butcher today or I will miss my slot. I sorted through the fridge freezer and cupboards to see what I have left and what needs to be used up and saw we had a fair amount of leftover vegetables and the perfect recipe to use up leftover veg is Nasi Goreng. It is fast, absolutely full of flavour and so delicious. I used Eleanor Ford’s recipe from her book Fire Islands. (If you don’t have this book then get it, it is a fabulous book).
The recipe calls for cold cooked rice (it really is a leftovers meal) so if you make this be sure to either have leftover cold rice or cook some and let it go cold, having cold rice keeps the grains separated when they are fried. I have made this before with freshly cooked rice as I had stupidly overlooked the cold cooked rice when I had looked through the recipe, nevertheless I ploughed on, my rice grains weren’t as separated as they should have been and so it may have been a bit heavier than the recipe intended but honestly that didn’t detract from the taste one little bit.
I love this dish and since discovering it we‘ve eaten it a lot. It ticks lots of boxes, meat free Monday, using up leftovers and a dish that takes less than 20 minutes from start to finish. Perfect.
