Christmas leftovers
I hope you all had a wonderful Christmas. It certainly wasn’t as busy or full of friends and family but there was something lovely about the simplicity and peace. I was thoroughly spoilt, I was given Glynn Purnell’s new book; there and back again which is HUGE, the ice cream attachment for my kitchen aid, Darren Purchese’s book lamingtons and lemon tart, a Marcus Waring book and a beautiful new set of measuring spoons and cups that made me smile so much.
As always there was lots of leftovers (partly due to the food being ordered before the Christmas restrictions were announced late on Saturday and partly due to me always over catering because I hate the thought of there not being enough food). I love leftovers and I think I am a bit of a leftovers queen. I love taking the ingredients and making a whole new dish with them rather than just reheating what you had and watching how surprised people are when they know it is leftovers.
Some of my favourite things to make with leftovers are cheese soufflés, chicken stock, chicken noodle soup, bubble and squeak, Massaman, pot pies which can either be made with chicken, turkey or vegetables (swede is gorgeous), Malay curry with traditionally is made with meat but a squash would work just as well, gammon hash, and an orange and pomegranate cake.
I also discovered mulled white wine which was very different to mulled red wine but really good.
